Broad Bean and Ricotta Bruschetta

Ingredients:

1 loaf of crusty bread

1 cup shelled broad beans

1/2 cup ricotta cheese

1 garlic clove, minced

1/4 cup fresh mint leaves, chopped

2 tablespoons olive oil

Salt and pepper to taste

Instructions:

Preheat the oven to 375°F (190°C). Slice the bread into 1/2-inch thick slices and place them on a baking sheet. Brush the bread with olive oil and sprinkle with salt and pepper.

Bake the bread in the preheated oven for 10-12 minutes, or until it is crispy and golden brown.

In a medium bowl, mix together the shelled broad beans, ricotta cheese, minced garlic, and chopped fresh mint. Season with salt and pepper to taste.

Bruschetta di Fave e Ricotta alla Siciliana:

Ingredienti:

1 pagnotta di pane rustico

1 tazza di fave sgusciate

1/2 tazza di ricotta

1 spicchio d’aglio, tritato

1/4 tazza di foglie di menta fresca, tritate

2 cucchiai di olio d’oliva

Sale e pepe q.b.

Istruzioni:

Preriscaldare il forno a 190°C. Tagliare il pane a fette spesse circa 1/2 pollice e disporle su una teglia. Spennellare le fette di pane con olio d’oliva e cospargere con sale e pepe.

Cuocere il pane nel forno preriscaldato per 10-12 minuti, o fino a quando è croccante e dorato.

In una ciotola media, mescolare insieme le fave sgusciate, la ricotta, l’aglio tritato e la menta fresca tritata. Condire con sale e pepe a piacere.

Disporre un cucchiaio del composto di fave e ricotta su ciascuna fetta di pane tostato.

Irrorare con un po’ d’olio d’oliva e cospargere con foglie di menta fresca tritate.
